Sweet Shrimp With Pineapple Sauce
Savory and sweet shrimp with pineapple sauce. The pineapple is very subtle and the shrimp goes fast! Always a favorite at parties!
Sweet Shrimp with Pineapple Sauce
- 1-1/2 Cup Pineapple Juice
- 1 Cup Sugar
- 2TB Flour
- 2 eggs beaten
- 1/2 tsp. Salt
- Juice of 1 lemon
- Zest from 1 lemon
- Coconut Flakes
- Maraschino Cherries
- 1 Pound Cooked Shrimp
Combine pineapple juice, sugar, flour eggs and salt in sauce pan. Whisk together and cook over medium-low heat stirring frequently. Continue stirring until flour is completely cooked and sauce thickens. Remove from heat, add lemon juice and lemon zest. Allow to completely cool.
After pineapple sauce has cooled, add shrimp and gently stir until evenly coated. Pour into serving dish. Garnish with coconut and maraschino cherries. Cover and chill until ready to serve.
Tip: I like to add ice in sealed bags in the bottom of the serving dish to help keep the shrimp chilled without adding extra liquid.
