Summer Salmon with Strawberry Salsa
We usually cook a whole fillet, but this method works just as great with salmon steaks. The strawberries and black pepper are surprisingly complimentary to each other as is the salmon and strawberries.
Summer Salmon
Lay salmon on aluminum foil, roll edges up to catch the juices from the salmon. Spice salmon with lemon pepper, salt, ground black pepper. Squeeze juice from a fresh lemon and drizzle with olive oil.
Cook on foil on the grill at medium heat, close lid or cover loosely with aluminum foil. The salmon is ready when it easily flakes as a fork is inserted. (25-35 minutes for whole filet, 15-20 for a steak.) If the fillet you choose has the skin attached, this method works beautifully as the skin will stick to the aluminum foil. The meat will lift off leaving the skin behind.
Serve Summer Salmon with Strawberry Salsa. It is also delicious served as fish tacos.
Strawberry Salsa
- 1 cup diced strawberries.
- 1/4 c diced onions
- 1TB chopped cilantro
- 1/2 jalapeno pepper diced
- 1TB lime juice
- 1 TB olive oil
- 1 tsp sugar
- sald and ground black pepper to taste
Combine ingredients, allow to set for 15 minutes before serving.
