Acorn Scotchies
We made one of our fall favorites (Peanut Butter Scotchies) into savory bite sized acorns.
Fall is the perfect time to make one of our all-time favorite treats in the Simmons family… Peanut Butter Scotchies! No matter how much we make, they disappear almost immediately.
This treat is fantastic as a bar… But as we are falling for fall, the kids and I had a great time making them into savory acorns! I hope you enjoy!
Ingredients
- 1 Cup Corn Syrup
- 1 Cup Brown Sugar
- 1 Cup Peanut Butter
- 1 tsp Vanilla
- 1 Box Crisp Rice Cereal
- ½ Bag Semi-Sweet Chocolate Chips
- ½ Bag Butterscotch Chips
Directions
Stir Corn Syrup and Brown Sugar in sauce pan. Cook on Medium heat until bubbly. Add vanilla and peanut butter. Remove from heat and whisk until creamy and smooth. Set aside.
In large bowl empty box of Crisp Rice, pour sauce over and stir until coated.
Line baking sheet with parchment paper. Pour mixture over sheet and press firmly. Melt Chocolate Chips and Butterscotch Chips together and use to frost a thin layer of chocolate over treats. Chill and cut into bars or squares.
For Acorns
For Acorns: Press a scoop of Scotchie in your hand, allowing some to “ball” up on top. Insert part of a pretzel stick in the top for a stem.
Coat bottom 2/3 of acorn with chocolate mixture and chill. For an extra savory effect, sprinkle a little kosher salt on chocolate.
