Creamy Chicken Alfredo
Holly and I had a great time together in the kitchen. She wanted to make Chicken Alfredo.
When we make a meal for all of the family, we are usually cooking for 14. So if you are looking at the ingredients and thinking this makes a lot, it does! Enjoy!
Ingredients
- 1 medium onion
- 1 cube butter (1/2 c)
- 1/2 c .flour
- 2 TB Original Mrs. Dash (Salt substitute/spice)
- 1 TB ground mustard
- 1/2 tsp ground pepper
- 2 tsp Italian seasoning
- 1 1/2 tsp parsley for garnish
- 3 Chicken breasts diced and sauteed with pepper and Italian seasoning
- 1 pint heavy cream
- 3 qt water
- 2#’s Fettuccine noodles prepared as directed on package.
Directions
Heat 3 qts water in large sauce pan and add 3 TB Better than Bouillon Chicken flavor
Saute the onions in butter until translucent and starting to brown. Add spices allow to set for a minute or so before adding the flour. This is my go-to rue for my soups and sauces. Continue to cook until golden brown and flour is completely cooked. (2-3 minutes).
Add 1- 2 c water from sauce pan to the rue mixture, add cream and de-glaze the pan. Carefully add the rue to the water in the large sauce pan. Stirring frequently, allow the sauce to simmer and thicken. Add parmesan cheese. When sauce has reached desired consistency, stir in prepared Fettuccine noodles.
Garnish with parsley and serve with garden salad and garlic bread.
